Ingredients

FOR KACHORI COVER
250 gm All Purpose Flour (maida)
1 tablespoon Semolina (suji/Rava)
2 tsp Oil
½ tsp Salt
100 ml to 125 ml Lukewarm Water
FOR STUFFING
½ cup Soaked Split Yellow Gram (moong dal)
1/3 cup Bengal Gram Flour (besan)
¼ tsp Asafetida (hing)
¼ tsp Red Chili Powder
½ tsp Salt
¼ tsp Dry Mango Powder (aamchoor powder)
2 tsp Oil
FOR GARNISHING
200 gm Curd
Or
200 gm Sweet Curd
Tamarind Chtney (emli ki chutney)
Green Chutney
Black salt
Red Chili Powder
Cooked Black Chick Pea wrapped in cumin powder, black salt and red chili powder
Chaat Masala
Roasted Cumin Powder (roasted jeera powder)
Boiled Potato Cubbed 1 big
Sev
Coriander Leaves (dhaniya patti)

You need only two things to make it, first, intention and second dedication. MAKE DOUGH

At first, in a bowl, add the all ingredients of the dough, except water.

MIX WELL

Mix all the ingredients using your hand. You can rub the mixture using your both palms.

ADD WATER

Pour water little by little to make the dough. You have to make firm dough. Take extra precaution, while making the dough. It may take 100 ml to 125 ml water, so do not pour water at a time.

KNEAD

Knead the dough.

LEAVE

Cover the dough and leave it for 10 minutes.

MEANWHILE MAKE STUFFING

We have kept our dough aside for 10 minutes, so why not to use the time and make the stuffing for dahi kachori. For this, in a bowl, add all the ingredients of stuffing and mix it using your hand, not a spoon. It is ready.

APPLY OIL

After 10 minutes apply a little amount of oil on your palm and knead the dough again.

DIVIDE

Divide the dough into 6 equals parts.

SMOOTH

Make each dough smooth.

FILL

Now, give each dough ball a bowl shape and fill 2 tbsp stuffing in each ball.

APPLY WATER

Apply little bit water on the edges of the dough bowl, so that the edges of the dough ball can stick properly. Never apply to much water.

CLOSE THE EDGES

Close the edges of each stuffed dough balls. Do it carefully.

ROLL

Press the stuffed dough ball softly and roll with very soft hand. Do not make it very thin, else stuffing will start floating in oil, while deep frying. Roll each kachori in this manner.

LEAVE

Leave rolled kachori for 10 minutes, but this time do not cover kachoris, let all open.

DEEP FRY

Deep fry each kachori on the medium flame and make kachori brown from the both sides. It's important, else your kachori will become soft after a few hours.

BREAK KACHORI

To serve dahi kachori, first break kachori in the middle.

MAKE DAHI KACHORI

Add boiled kala chana, boiled potato,dahi, emli ki chutney, green chutney, and all spices. Again, make second layer. For this again add all the ingredients, but this time also garnish it with sev, dhaniya patti and anar dana. Yours Dahi Kachori is ready to serve.

TIPS

• You can substitute kala chana with matar also.
• Kachori can long last for 2-3 days.
• You can make stuffed paratha using left over stuffing.
