FOR MANGO CAKE SPONGE
1 cup Mango puree
1 cup Unsalted Butter or Oil
1 cup Sieved All purpose flour (maida)
¼ cup Corn flour
¾ cup Sugar powder
1 tsp Baking soda
¼ tsp Baking powder
a pinch Salt
¼ tsp Vanilla essence or cardamom powder (choti ilaichi)
MANGO GLAZE
2 tbsp Mango puree
2 tsp Sugar
2 tsp Water
1 tsp Lemon juice
LEMON CREAM
1 cup Amul cream
½ cup Icing sugar
½ tsp Lemon juice
DECORATION
Cherries
Dry fruits (chopped)

Market is flooded with fresh mangoes. I was thinking to make something from it. So I decided to make Eggless Mango cake. I also wanted to give it a lemony taste so, I decorated it with Lemon flavored cream. You can make any recipe using mango. Each and every recipe tastes grate, but I tell you that eggless mango cake will capture your heart.

“Eggless Mango Cake Recipe With Lemon Cream Frosting”. Mango cake is a very delicious and mouthwatering specially when decorated with lemon cream and cherries. Mango cakes which are made with real pulp are very soft and moist. We do not need to add mango essence to give it a flavor. It is very easy to bake at home. During the summer you can get perfect mangos for this purpose so I suggest you to bake it in summers.

How to make Mango pure?

It is very easy to make mango puree at home. You just peel off the mango and add its pulp to your blender and blend it. It would take hardly 1 minute and your Mango puree is ready to use.

WHISK BUTTER AND SUGAR

Add butter to a bowl and place it any hot place, you can sun it for 1-2 minutes also so that it melts. . Now add sugar powder and salt to it and whisk it properly.

ADD DRY INGREDIENTS

After mixing the butter and sugar properly add sieved dry ingredients to it.

MIX

Mix it properly. Here you will realize that it is like dough.

ADD MANGO PURE AND ESSENCE

We will add mango puree to give it semi liquid texture. Now add the mango pure, vanilla essence or cardamom powder to it.

WHISK

Whisk it till fluffy and shiny.

TRANSFER TO GREASED MOLD

Grease the cake mould and dust some dry all purpose flour on it and then pour the cake mixture into the mold.

BAKE IN OVEN

If you are using an oven to bake this cake, then bake it at 180 degree C for 35 to 4o minutes. To check whether your cake is cooked properly or not insert a knife in it and if the cake doesn't stick on your knife, then your cake is cooked properly else bake it for some more minutes.

BAKE IN MICROWAVE

If you are baking it in microwave, then firstly preheat oven and bake your cake on a low rack in convection mode at 200 degree C for 35 to 40 minutes after it insert a knife in its center and if it comes out clean then it's ok else bake for some more minutes.

BAKE WITHOUT OVEN MICROWAVE

If you are neither using Oven nor Microwave then you can use your big casserole to bake your cake. For this, at first place big burner stand upon small burner stand. Now place the casserole on the burner and cover with its lid and heat it for 2 minutes on high flame after that reduce the flame to low and place a small bowl or plate upside down on the middle of the casserole then place cake batter filled mold on this bowl or plate. Cover casserole with lid and bake cake for 35- 40 minutes and after that insert a knife in its center and if it comes out clean then your cake is baked properly else bake for some more minutes (article).

How to make Lemon Cream?

At first, in a bowl, pour chilled water or ice. Now in a different bowl, add cream and place this bowl in the ice or chilled water to the first bowl. Whisk cream properly. After doing so add icing sugar and lemon juice to it and whisk it till form peaks. Keep it inside the refrigerator and at decoration time take it out from there.

How to make Mango Glaze?

In a non stick pan, add all the ingredients of Mango Gaze and cook it till it stops sticking to pan. It will look shiny and smooth.

How To Decorate Cake?

At first place the cake on the plate on which you want to serve it and apply ½ portion of mango glaze on it. Now fill your piping bag with cream and make several small - small spiral shapes on it. I have used here 5 no icing nozzle for this purpose. Now, pour small - small amount of mango glaze on each shape. Sprinkle chopped dry fruits around the middle peek and upon each glassed peek. At last place cherries on each peak. Your Eggless Mango Cake Recipe With Lemon Cream Frosting is ready to serve.

TIPS:-)

• If your cake is getting brown from the top, then after 15 minutes cover it with foil paper. Never before 15 minutes.
• If you are using salted butter, then do not add salt to it.
