4 cups (use 100 gm cup) Soaked Black gram (Kala Chana)
2 big Onion Sliced
4 tbsp Coriander Powder
1/2 tbsp Turmeric Powder
1 tsp Red chili Powder
1/2 tsp Kashmiri Red Chili Powder
a little bit less then 1 tsp Garam Masala
1 tbsp Salt
1 cup (use 100 gm cup) Oil
1 small piece Nut Mag
2 Bay Leaf
2 Dry Red Chili Sticks
1 (optional) Green Chili
1 tbsp Ginger Garlic Paste

    Yummmm 🙂  🙂 Kale Chane Ki Masale Wali Sabji. It is just favorite of everyone. As being Bihari, it is my favorite dish also. Very spicy and exotic kale chane ki sabji or ghughni just goes well with everything. We in Bihar eat this with Cooked Rice, Puri, Paratha, Mudhi (bhel), Chura (poha) and also use it to make it chaat. 
                          We do not use any sour ingredients while cooking kale chane ki sabji. Just spices and onion. These are the taste enhancer we use. Let's move toward the recipe.

    Steps

    BOIL CHANA

    In a pressure cooker add the soaked chana, 1 tsp salt, few drops oil and nut mag. Fix the lid and cook it 90% only. After 1st whistle reduce the flame to low and cook it for 3 more whistle. After 3 whistle, switch off the flame and let the cooker cool itself.
    * Do not add too much water to cook chana. Just a little bit more then the level of chana.

    HEAT OIL

    Meanwhile, heat oil.

    ADD BAY LEAF & DRY RED CHILI

    Add bay leaf and dry red chili sticks to the heated oil and let both become brown.

    ADD ONION

    Add the sliced onion and fry on the high flame to make golden brown.

    MAKE PASTE

    In a bowl, add left over salt, coriander powder, turmeric powder, red chili powder, kashmiri lala mirch powder, ginger garlic paste, green chili and water. Do not add too much water. You have to make a smooth paste only.

    ADD PASTE

    Now, reduce the flame to low and add this paste to the fried onion.

    MIX

    Mix well.

    COVER & FRY

    Cover the pan and fry it on the flame till starts releasing oil. Stir the masala in between.

    FRIED & COOKED

    The masal is fried now. Our chana is also cooked

    ADD

    Now, add the fried masala and garam masala to the cooked chana. Mix all well.
    See, if there is too much water in cooker, then take out some water from cooker and then add masala. You can mix this water later, if needed.

    COOK AGAIN

    Cook the chana again on the high flame till 1st whistle. After 1st whistle reduce the flame to low and cook it for 1 more whistle on the low flame. Let the cooker cool itself.

    TIPS

    . You can increase and decrease the amount of salt and red chili powder as per your taste.
