• STUFFING
1 cup Dry Milk (mawa)
2 tbsp Dry Roasted Semolina (sooji/rava)
3/4 cup Sugar Powder (cheeni powder)
Dry fruits
Tutti Frutti
1/2 tsp Cardamom powder (choti elaichi powder)
1 tsp(optional) Gulkand
1 tsp Rose water
1 tsp Ghee
10. Ghee to deep fry Gujiya
• COVER
1 bowl All Purpose Flour (maida)
1/2 cup Ghee
a little bit less than 1 cup Water
a pinch Baking soda
• SUGAR SYRUP
1 cup Sugar (cheeni)
1+1/4 cups Water
1/2 tsp Saffron (kesar)
1 tsp Rose water
2 pieces Cardamom (hari elaichi)

There are lots of types of gujiya recipes like Mawa Gujiya, Coconut Gujiya, Peanut Gujiya and Sooji Gujiya but Mawa Gujiya is very popular among we Indians. Some people dip gujiya in to sugar syrup and some people make dry Gujiya. Today in my post I will tell you how to make Mawa Gujiya dipped in sugar syrup?  Dipping Gujiya into sugar syrup makes gujiya more delicious and a little bit juicy to. MAKE SUGAR SYRUP

At first make sugar syrup using ingredients of sugar syrup and keep it aside. No need to make threads. Just dissolve the sugar into water on the high flame and add the other ingredients of sugar syrup section. Boil for 3-4 minutes and you are done.

MAKE STUFFING

Now in a bowl, mix all the ingredients of stuffing and keep it aside. Do not forget to cover it.

MAKE A SOFT DOUGH

Now in a bowl, add all the ingredients of the dough and knead it to make a soft dough. Keep aside dough for 30 minutes.

DIVIDE THE DOUGH

After 30 minutes, knead dough again and divide the dough into 15 equal parts.

ROLL

Take one ball of dough and roll it. Roll it thinner than puri dough and keep it’s edges thinner than its center.

APPLY WATER

Take rolled dough on your palm and apply a little bit water upon its edges. Never apply too much water upon edges, else its edges will not close properly.

PUT STUFFING

Now place some stuffing in the center of the rolled dough.

Close its edges properly with the help of your fingers.

MAKE DESIGN

Now make a design on edge as per your desire. In this way make all the Mawa Gujiya. Always cover filled gujiya and gugiya dough with a cloth.

SLIP GUJIYA IN HOT OIL

Now in a pan, heat ghee and slip some pieces of gugiya to it . Make all gujiyas a little bit brown.

DIP IN SUGAR SYRUP

Take out each gujiya from oil and add to luke warm sugar syrup. Flip all gujiyas and let all gugiyas be there for 1 minute. Never let your gujiyas be there for more times. It will make your gujiya soft like puri. Only one minute is sufficient.Your Mawa Gujiya is ready to serve. Enjoy it on this Holi. Happy Holi to you all!!!!!

TIPS

• Always add gujiya to luke warm sugar syrup. Either in cold syrup nor in hot syrup.

• Close the edges of filled gujiya properly else the stuffing will come out from the gujiya at a deep frying time.

• Never apply too much water on the edges of rolled dough.

• To enhance the taste of stuffing, add 1 tsp coconut powder to it.
• You can make Bread Pua, Bundiya or Motichoor Ke Ladoo with left over sugar syrup.
