1 cup Sago (sabudana)
1 cup Potato (chopped)
1 cup Onion (chopped)
½ cup Peanut Roasted (bhuni mungfali)
½ tsp Mustard (sarso/rai)
7 to 8 pieces Curry leaves
2 Green chilies (chopped)
½ cup Chopped Coriander leaves (dhaniya patti)
½ tsp Salt
1 tbsp Lemon juice
¾ cup Oil

    Sabudana Khichdi Recipe. It is the very popular Maharashtrian Recipe. There are lots of recipes in Maharashtra, which are made using Sabudana or Sago as a main ingredient. Sabaudan Khichdi is among those recipes. Sabudana is being considered as fruits hence it comes under those things which you can take during your fast or vrat. Today my Sabudana Khichdi Recipe is not such type of recipe which you can take on fast. I have used onion in my recipe so obviously not for vrat. You can take it on your breakfast or little evening hunger.

    MAKE SABUDA NA WARM

    At first add sabudan to a heated pan and make it warm. Touch sabudana with your hand if it has become warm, then take it out from pan. The colour of sabudan should not change. I mean to say that you do not have to make it light brown or anything else. Just make it warm. Now let it cool at room temperature.

    SOAK THE SABUDANA

    Touch Sabudana, if you feel it is of normal temperature, then in a bowl add it with water. See you do not have to pour too much water as you do for soaking any other things. You just have to pour water in an amount so that the sago or sabudan is about to dip completely and then stir it with a spoon.

    CHECK THE SOAKED SABUDANA

    Cover it and let it be like that for at least 3-4 hours. Take out lid and see how much free flow your sabudana is.!!!!

    HEAT OIL ADD HEARBS

    At first, pour oil and heat it. Now add curry leaves, mustard and green chilies to it.

    ADD ONION AND POTATO

    Let the mustard crack properly, then add chopped onion, chopped potato and ½ amount of salt to it.

    FRY ON LOW FLAME

    Cover it and cook it on low flame till the potato becomes brown and also become soft.

    ADD SABUDANA AND SALT

    Stir in between. When potato becomes brown; then add soaked sabuda and salt to it. Mix it properly and cook it on the low flame for 5 minutes. Do not forget to cover it.

    CRUSH PEANUTS

    Meanwhile, roughly crush roasted peanuts in a crusher.

    ADD PEANUTS AND CORIANDER LEAVES

    After 5 minutes, add crushed peanuts and coriander leaves to it.

    ADD LEMON JUICE

    Mix it and add lemon juice to it. Your Sabudana Khichdi is ready to serve.

    TIPS

    • Instead of dry roasting sabudana you can sun it for few hours.

    • You can add soaked chana dal to it.

    WARNING

    • Never add to much water while soaking sabudan because it will make your recipe sticky.
