1 kg Chicken
750 gm Onion Sliced
2+1/2 cup (250 gm) Mustard Oil
8 tbsp Coriander Powder
1/2 tbsp Turmeric Powder
1/2 tbsp or as per your taste Red Chili Powder
1/2 tbsp Kashmiri Red Chili Powder
1 tbsp or as per your taste Salt
1/2 tbsp Garam Masala
2 tbsp Ginger Garlic Paste
3 Bay Leaves
3 Dry Red Chili Sticks
2 Green Chili
1 small piece Nut Meg
500 ml Water

    Hi friends, today I am going to tell my secrete recipe of Spicy Chicken Curry. This is favourite recipe of my family. I do not use too many ingredients to make it also. It is quick and easy recipe and you do not need to marinate chicken as well. 
                 Even though this is normal chicken recipe in Bihar but it is hard to find that perfect taste and aroma in every spicy chicken curry recipe. Some people use too much red chili powder and others too much garlic. Some people use very less onion, then some do not add garam masala, so it is very hard to find a perfect Spicy Chicken Curry Recipe.
                         Do not worry, I will give you a perfect Spicy Chicken Curry Recipe, which will make you chicken lover. I always share my chicken recipe with my family members and neighbours, but for the first time I am going to share with you all. I am sure, that you will also like it.

    HEAT OIL

    At first, in a thick bottom heavy pan heat oil. If possible then use iron cooking pan or aluminium cooking pan.

    ADD BAY LEAVES & RED CHILI

    Now add bay leaves and red chili sticks. Break red chili sticks before adding it. Fry for 1 minute.

    ADD ONION

    Now, reduce the flame to low and add the onion. Mix well.

    FRY

    Fry the onion on the high flame to make it golden brown.

    MEANWHILE MIX SPICES

    The onion is frying, meanwhile in a big bowl mix all the spice powders (except garam masala), salt, green chilies, ginger garlic paste , nut mag and water. Add water to make a thick paste do not make it watery.

    ADD CHICKEN AND SPICES

    The onion is fried now. Reduce the flame to low and add washed chicken, and the spice paste, which you have just made. Mix well.

    COOK

    Increase the flame to medium and cover the pan with lid. Cook and fry it on the medium flame to low flame only. Never on the high flame. You have to fry it till it starts releasing oil.

    STIR

    Stir chicken occasionally.

    THE CHICKEN IS FRIED

    The chicken is fried. You can see the oil is floating and the color of chicken and spices has become brown.

    CHECK THE CHICKEN

    Now, check the pieces of chicken to see that, these are cooked properly or not.

    ADD WATER

    If the chicken pieces are cooked properly, then add 500 ml water but if it is not cooked properly, then add little more water. Mix well.

    COOK

    Increase the flame to high and cover the cooking pan with the lid. Cook it. After few minutes you will start listening sound of boiling the gravy, then reduce the flame to medium and cook it for 5 minutes. If your chicken is not cooked properly then cook it till the chicken get cooked properly.

    ADD GARAM MASALA

    After 5 minutes add garm masal and mix. Cover it and again cook it on the low flame for just 1 minute. Not more than that. Let it cover properly for at least 5-6 minutes. then only serve it.

    Yours Spicy Chicken Curry is ready to serve. Serve it with Jeera rice or zero oil pulao.

    TIPS

    . You can adjust salt and red chili powder as per your taste.
    . Use mustard oil if possible.
